Escape the pavement without leaving the city. In the morning we hike the capital’s last native forest looking for endemic birds like the moustached turca and the Chilean mockingbird, among litre, quillay and peumo trees. Then a farm-style lunch and Cousiño Macul (est. 1856), with its underground brick cellars and a private tasting.
